While modern recipes often add sugar or milk, true Amaras needs nothing extra. At Vecov Farms, we follow a purist’s approach that lets the natural richness of organic Alphonso mangoes take center stage.
Ingredients (Pure & Minimal)
- 4 large naturally ripened Alphonso mangoes
- A pinch of dry ginger powder (Sunth)
- A few strands of saffron (optional, soaked in warm water)
- A pinch of cardamom powder (Elaichi)
The Traditional “No-Blender” Method
1. The Gentle Massage
Before peeling, softly press and roll the mango with your palms. This loosens the pulp naturally without disturbing its texture.
2. Hand Extraction
Remove the top and squeeze the pulp into a bowl. Gently wash the seed (gutli) by hand to extract every bit of the rich, golden रस.
3. Optional Straining
For a smoother consistency, pass the pulp through a sieve or muslin cloth. Avoid blenders—they can dilute texture, color, and aroma.
4. Light Seasoning
Whisk in dry ginger and cardamom for a subtle, traditional finish.
